Hope you are well. Loving the new look site. Great easy to use layout.
May I ask a question please - I am making Delia's Oven Baked Mushroom Risotto tomorrow night. However, I forgot to buy the dry madeira! Can I substitute it with Marsala? Or do you think I should top if up with just warm water?

Power Cut!
Hi Lindsey,
Hope all's well with you this fine Saturday morning.
We've just had a 20 minute power outage and I had some ginger biscuits that had been put in about five minutes previously. I left them in and they had turned golden with the residual heat but were still a bit soft so they are now having 10 minutes to cook them properly.
It leads me to ask what is the best thing to do if I'd had meat in the oven, leave it in and hope the power returns quickly or take it out and chill it or are neither of these options good if it's meat?

Keeping risotto warm
Is it going to be OK to leave it a bit longer while I serve and eat our starter? Say 10-12 minutes?

Delia's shortcrust pastry is made with butter and lard, can the lard be changed for Trex or just all butter.

When printing a recipe why does the Method come before the Ingredients?

The measure of it!
Hi Lindsey
It's me again! Two things both after the event as it was too late to ask you.
1. The recipe for the Austrian coffee and walnut cake states 7 fluid ounces, 200 mls fromage frais. Yet on the strawberry and vanilla pavlova it says 200g fromage frais. How come it is in two measures, I have only seen it in grams. I realise there isn't much difference in the two measures on small amounts like that, I was just wondering that's all.
