Hello Lindsey
Hope you are well. Loving the new look site. Great easy to use layout.
May I ask a question please - I am making Delia's Oven Baked Mushroom Risotto tomorrow night. However, I forgot to buy the dry madeira! Can I substitute it with Marsala? Or do you think I should top if up with just warm water?

We are well thank you and we’re so pleased to hear that you are enjoying the new site
If it is dry Marsala you want to use in the risotto, yes you can just swap it, but if it’s sweet I would suggest that you use some dry white wine with a splash of Marsala.
Or if your Marsala is sweet, and if you don’t have (or want to open) a bottle of dry wine, you could increase the dry mushrooms a little and use 670mls boiling water and then add just 50mls of the Marsala.

Thank you Lindsey. That's really helpful. The Marsala is medium sweet so I think I will go for increasing the dry mushrooms (have got plenty of those), use the boiling water and top up with the 50mls of Marsala.
