Can I make (or freeze) the Rosti Crab Cakes ahead and one of my guests is allergic to aubergines. What would you recommend replacing with?

I haven’t tried freezing the crab cakes but I’ve been told that if the crab is fresh, they can be shaped, frozen flat and sealed in a freezer bag or box for up to 2 months, then cooked from frozen (allowing a little more time) or defrosted overnight (covered flat on a plate) before cooking.
For the aubergine replacement I’d just increase the other vegetables and use both a red and yellow pepper.
