Raw egg and crimping the Simnel cake

I am baking a Simnel cake for the first time and noticed that some recipes (not Delia's) have you brush the top marzipan with raw egg and then torch the marzipan or place under a broiler. Is this safe as I have always thought that raw egg should not be consumed. I don't want to endanger the health of parishioners. Any suggestions on crimping the marzipan edge? Should this be done with thumb and finger or is a tool a better choice.

British Lion hens’ eggs are safe to eat raw.
However, it’s not needed for simnel cake. The marzipan will brown under the grill or with a blowtorch without the egg.
