Making a smaller curd cheesecake without the curd cheese!
Asked on 24 Apr 2020 by Charlotte F
I have two simple questions about the curd Cheesecake with Greek yogurt, honey and pistachios, please. I can't find curd cheese in my nearest supermarket. What else could I use?
Also, as we're currently in lockdown, I can't socialise with the number of people that might be necessary to enjoy this rather large cheesecake (serves 10-12). If I directly halve all the ingredients, will the cheesecake work just as well for 5-6 people? Thanks.
Hello,
You can use full fat cream cheese instead of curd cheese.
Yes, you can halve the recipe. I’d do 95g of beaten egg, halve everything else and use a 6 inch tin.
Probably bake the cheesecake for 25 minutes (130C if you’re using a fan oven) before turning the oven off.
Best wishes

Thanks, Lindsey. I hope you and Delia are keeping well during these strange times.
