Drop Scones

Hello Lindsey
As you know I can't get hold of SR flour and I want to try the drop scones from an old 1977 Delia Book of Cakes.
Apart from the SR flour it includes 1.5 tsp bicarbonate of soda and 1 tsp cream of tartar. Are these essentiai and shall I add more baking powder to make up for the lack of these ingredients? I can buy bicarbonate of soda but cream of tartar is more difficult.
I will be using a frying pan, so do I have to keep greasing the pan or will the first greasing last?

Hi Wendy,
In your case you could try the drop scones with the 225g plain flour and 4 teaspoons baking powder or I would try 225g plain flour, 3 teaspoons baking powder, ½ teaspoon bicarbonate and a teaspoon of lemon juice, which may give a lighter result
I would only re-grease if they start to stick.

I made the drop scones yesterday using three tsp baking powder, 1.5 bicarb and 1 tsp lemon juice. I think a drop less liquid would be better in my case as I put a handful of sultanas in and by the time I got to the last spoonfuls there was not a lot of fruit left as it was a bit too liquid to support the fruit..
I used a dessert spoon for each of them and I got 45 scones out of the batter. I wanted to make them smaller as I had the intention of freezing some but R says not to bother that're not going to last that long! We are already down to 20-odd left.
So they can be counted as a great success.
