Re the Blini and smoked salmon recipe. Can the blinis be frozen, as there are only two of us?

Hello,
Yes you can freeze Buckwheat Blinis for up to six months.
Make blinis as per the recipe but cool quickly by placing on a wire rack. Wrap in baking parchment and foil to form parcels of 6. Defrost overnight in the fridge then to reheat, preheat the oven to 140°C, place the parcels on the oven shelf and heat through for 10 minutes.
