Freezing creme brulee

Hi Lindsay,
Re. freezing creme brulee.
Delia says that her creme brulees can be frozen, but it's unclear whether it should be frozen with or without the caramel topping. Most of the internet advice says 'without' but I'd prefer you advice on this please.
Also, both the vanilla and chocolate creme brulees contain vanilla but, for the two-tone vanilla/chocolate version, the directions say to put the vanilla in the vanilla portion only. Is this correct, or should I divide it between the two flavours?

With regards to freezing, with or without the sugar, you can do either. If you freeze with the sugar, you do need to have a good layer of melted sugar for this to stay crisp. We use 1 tablespoon of sugar per ramekin but bear in mind that Delia use an old fashioned kitchen tablespoon which is equivalent to 2 dessertspoons.
With regards to the chocolate vanilla brûlée, we do not put vanilla in the chocolate custard, but you can if you like.
